The wet:
1 cup buttermilk (bulgarian style is my fav.)
2 tablespoons melted butter
1 large egg
The Dry:
1 cup (5 oz.) unbleached AP flour
2 teaspoons sugar
1/2 teaspoon salt
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon vanilla extract (Mexican tastes best)
1 teaspoon cinnamon
1/4 teaspoon ginger
1-2 handfuls of chopped pecans
The Ugly:
Measure the 1 cup of buttermilk in a 2 cup measuring cup. Add the egg and vanilla and stir. Then add the butter. I usually make 10 cups of the mix at a time so I just add a cup of mix in the measuring cup to cut down on cleanup. Mix but don't over mix then stir in the pecans. Then cook up some good pancakes.
